Learn how to make soda bread with this recipe that features spiced buckwheat, rolled oats and sultanas. It’s best served sliced and drizzled with honey.

Ingredients
1/2 cup traditional rolled oats
1 cup bread & pizza plain flour (plus extra for dusting)
1 cup buckwheat flour
1/3 cup sultanas
1 tsp bicarbonate of soda
1 tsp mixed spice
1 pinch cooking salt
1 cup buttermilk (plus extra for brushing)
2 tbs honey (plus extra to serve)
1 tbs raw buckwheat
Method
Step 1
Preheat oven to 200°C/180°C fan-forced. Lightly spray Souper Cube tray with olive oil
Step 2
Reserve 1 tsp oats. Combine flours, sultanas, bicarbonate of soda, mixed spice, salt and remaining oats in a large bowl. Add buttermilk and honey. Mix to form a soft dough. Transfer dough to a floured surface. Knead until smooth.
Step 3 Shape dough into a ball. Place on baking tray. Flatten to form a ball and fit inside the tray. Score a cross into top of loaf. Brush with extra buttermilk. Dust with extra flour and sprinkle with buckwheat and reserved oats. Bake for 30 minutes or until browned and bread sounds hollow when tapped. Set aside for 10 minutes to cool slightly. Slice and serve with extra honey.
